Our chicken is brined for 12 hours then marinated in buttermilk for 6 hours. We slowly cook & baste it to 80c so it's fully cooked and chill it ready to oven cook. Then we stuff with garlic and prepare you a beautiful bouquet-garli of mountain herbs to help add flavour while roasting.

Cook time: 45 minutes


1 x Whole basted & stuffed chicken

500ml Chicken gravy

To cook:

1. Preheat the oven to 200c

2. Roast the chicken on an oven tray for 15 minutes before turning and spooning any extra cooking juice from the pan over the chicken before roasting for another 15 minutes. Allow for a further 15 minutes depending on oven types to ensure the chicken is piping hot throughout. Allow the chicken to rest covered in foil for 10 minutes before carving.

3. Heat up the gravy in a pan and serve roasted carved chicken with perfect gravy.
